Lets Talk MEAT
The 3-2-1 Method is a popular cooking technique for preparing fall-off-the-bone tender ribs. Here’s an adapted version using Nixe Sauce, which incorporates a glazing step with your preferred BBQ sauce and the delicious spices of Nixe Sauce. The amount of Nixe Sauce needed will depend on personal preference. Start with about ¼ cup and adjust as needed. You can also increase or decrease the ratio of Nixe Sauce to BBQ sauce to suit your taste.
Ingredients
- 1 rack of St. Louis cut spare ribs (about 3-4 lbs)
- Nixe Sauce (to taste, see notes below)
- Your favorite BBQ sauce (to make a 1:1 mixture with Nixe Sauce)
- Water
- Aluminum foil or parchment paper
The 3
- Prepare your grill or oven for indirect cooking by placing a drip pan filled with water on one side. This will create a smoky(if in the grill) environment without the ribs steaming.
- In a large bowl, mix together Nixe Sauce and your favorite BBQ sauce in a 1:1 ratio. Set aside.
- Preheat your oven to 220°F
- Trim the excess fat from the ribs, and remove the membrane by gently pulling it away from the bones. This step is optional but recommended for a more tender result.
- glaze the ribs with mustard and honey/brown sugar
- cook the ribs meat side up for 3 hours
The 2
- Place the ribs on a large sheet of aluminum foil meet side down
- Add a (tiny!!) bit of water around the ribs, ensuring none leaks from the sides
- Tightly wrap the ribs with the aluminum foil
- Please the ribs back inside of the oven meat side down for hours
The 1
- In a small bowl, mix together your favorite BBQ sauce and an equal amount of Nixe Sauce.
- Remove the ribs from the oven.
- Brush the glaze mixture evenly over the top and sides of the ribs.
- Return the ribs to the grill or oven meat side up, and continue cooking for an additional hour.
- After 1 hour, check that the ribs are tender and pull-apart easily with a fork. If they’re not quite done yet, continue cooking in 45-minute increments until they reach your desired tenderness.
- Serve the ribs hot off the grill or oven, garnished with fresh herbs like parsley or cilantro if desired. Enjoy the delicious flavors of Nixe Sauce and BBQ sauce meld together in every bite!
